Production

Our society's production site, AGRICOLA PERUZZO,  has been based in Sicily for many years.

 

Our grapefruits grow in the surroundings of Canitatti and Mazzarone, the best regions in Italy, famous for giving a special taste to the grapes.

 

In order to offer good quality products under our different brands  LUCAS, ALE'X and MAGALY, we proceed methodically.

The rootstock has to reach the proper size in order to obtain an ideal grafted grapefruit. We then introduce the appropriate grafted grapefruit (Vittoria, Italia, ….) adapted to the land and to the climate. From our point of view, production is a joint effort of nature and technical interventions of specialists in order to have the most exquisite grapes.

THE PRUNE

It generally starts in January but it is always done after an expert has checked it is the right time. Thus ensuring the good health of the vine. Branches that are not cut are then tied to a post that acts as a skeleton to the vine.

In an ever-repeated gesture, the grapes are covered with canvases that will protect them from climate difficulties ; canvasses are then tied to the skeleton. The aim of this cover is to create the ideal microclimate to the grapefruits.

They appear approximately 2 years and a half after the vines are planted. It is around April that we begin to see the embryo of our future grapes.

Approximately 20 days after the young buds have arrived, we have to proceed to the de-leafing : we cut the useless leaves and thus enable the fruits to reach their full potential. With this process, the fruits are healthy and vigourous.

In the entire process, this is the most important step but our job here is limited to mere observation. During this phase, only nature takes care of our grapefruits growth.

The thinning process Hand made process that takes place between May and July depending on the different varieties. The employees' manual work has to be very precise and skillful in order to select the right grapes and thus to obtain grapes that are perfectly airy and homogenous. THE SAMPLING

THE SAMPLING

We collect one grape on various grapes from different vines of the cultivated parcel in order to guarantee a consistent result. We bring the sampling to the lab where numerous analysis are made. We obtain results within 24 hours and then we can evaluate the quality of the grapes and make sure they meet the standards.

QUALITY CONTROL

QUALITY CONTROL

The quality controls are done in the warehouse after every single harvest where the trays are labeled and meticulously checked before they are placed on pallets. We then put away the pallets in cold rooms in order to cool the grapes for a better preservation. The failure rate is measured for each chaque lot with the refractometer. We keep a sample of EACH shipped LOT in cold rooms : a part of this sample will also be sent to the lab.

THE HARVEST

After this long process, it is time to harvest our grapes. When the grapes are ripe, the workers harvest the grapes that have been protected for long months by its own vine. Then the grapes are packed.
